This goodie is one of Dad's favorites and often my go-to birthday present for him. This year I added a little something new to the usual double-dipped chocolate bananas with coconut (another of his favorite flavors) on the white chocolate and pecans (he loves those, too!) on the milk chocolate. These healthy candies are stored in the freezer and become like ice cream treats which can be eaten one or two (or more!) at a time.
Here's how to put together these little yummy delights.
Cut your bananas into one inch segments. Greenish bananas work well as they hold to the utensil better when dipped than fully ripe bananas do. Melt your white chocolate in a double boiler.

Dip your banana bites half-way into the white chocolate and immediately dip into coconut. Allow to dry.
Prep your pecans by chopping into small bits. Melt your milk chocolate in a double boiler. If your chocolate is too viscous, this is a great recipe to use coconut oil as your liquefier.

When your chocolate is melted, dip the remaining exposed half of each banana bite up to the point of the white chocolate. Immediately dip into the chopped pecans. Set aside to dry.

Hope you enjoy your double-dipped chocolate coconut & pecan banana bites!
